Ingredients
4 to 5 mushrooms quartered
1 cup uncooked barley
2 large carrots, diced
2 stalks celery, chopped
2 zucchini, diced
1 nos tomato quartered
1 onion, chopped
3 bay leaves
1 teaspoon garlic chopped
1 teaspoon salt
1/2 teaspoon crushed red chilli (option)
Method
Take a Sauce pan adds olive oil garlic and chopped onions, celery, barley and sauté for few minutes add water and let it simmer. Bring to a boil, then cover and simmer over medium-low heat for 30 minutes or barley is ¾ th cooked now add vegetables and cook till it is done and stew becomes thick,. You may adjust by adding more broth or less barley if desired. Remove bay leaves before serving.
