Ingredients: 1Lts water 1/2 cup coconut milk 500 gms raw rice Basmati 4 pcs of lobster shelled deveined 2 tsp coriander powder 1/2 tsp red chili powder 1/2 tsp black pepper powder salt to taste 2 tsp chopped onions 2 tsp chopped tomatoes 50 gms ginger garlic paste
Method: Take oil in heavy bottom pan Add onions sauté when transparent add tomatoes, coriander powder, red chili powder, black pepper powder and ginger garlic paste and sauté add water coconut milk, lobster and rice,Cook for 15 minutes on high flame. in meantime take a tender coconut shell when rice is 3/4th cooked add rice and lobster mixture to coconut shell seal and cook for 20 minutes in oven till rice is cooked serve in shell garnished with coriander.
For a better result use tender coconut water for cooking in place of water
